If you choose not to use kitchen compost bags, then you will need to clean your compost container on a regular basis in order to keep down smells and also to make sure that it remains hygienic as well. Adding in some baking soda to the compost will also help to prevent your kitchen compost from smelling as well.
If you find that your home seems to produce a lot of kitchen waste, consider adding another kitchen compost container. This will ensure that everything is collected but will relieve you from the burden of having to make your way out to the compost pile every day. When both containers are full or when it becomes more convenient you can then take them both out at the same time.
